Jaime's baking experience came early in life at her mother's elbow, learning the intricacies of making a chocolate mousse with chocolate leaves. The family's traditional "flaming flan" was always a show stopper, even if an occassional beard was singed along the way. From her mom, Jaime learned not only a love of baking, but also for thinking outside the box and taking creative risks.

Eventually this led Jaime to a career changing step, that of enrolling in the Western Culinary Institute of Portland, in the Patisserie and Baking program. Upon graduation in 2008, Jaime emerged with a detailed knowledge of how ingredients work together and the skills to create the edible masterpieces she envisioned. Since then her skills have been polished by numerous creative birthday and wedding cakes and sublimely tasting and decorated cupcakes and candy desserts.
